About Koikawa
Koikawa has been brewing in Shonai, Yamagata Prefecture, since 1725, nearly 300 years. The brewery is famous for reviving Kame no O, a legendary sake rice that had almost disappeared. Since 2016, Koikawa has made only junmai (pure rice) sake, and it's known for gently aged sake that brings out the natural flavour of the rice.
How it's made
A junmai sake, aged for about a year before release.
Taste
Light yellow in colour. Light, mellow and refreshing, with balanced umami and acidity.
How to enjoy
Very versatile: enjoy it chilled, at room temperature or warmed to around 50°C, which brings out more aroma and flavour. Great with sashimi, yakitori, hotpot or grilled fish.
